'Pam the Jam' Corbin is the UK's leading expert on jams, jellies, marmalades, chutneys, pickles and other preserves, and she has been in the business for more than thirty years. As well as judging at the World's Original Marmalade Awards in the Lake District (entries come from across the globe every year), she works closely with the team at River Cottage. She is the author of Preserves and Cakes, both of which are part of the award-winning River Cottage Handbook series. Pam lives in Devon.

Excellent recipes and tips on preserving everything from jams to pickles and especially marmalades from the British expert on the subject.
I had no problem following her instructions and always happy with the results. Will buy again as a gift.

This is a terrific book for home canning, jams, preserves, pickles, and chutneys. The measurements are in grams where appropriate (not the archaic cups), the descriptions are fulsome and easy to understand, and there are plenty of notes and pages about ingredients, techniques, and equipment. The recipes offer a good selection of traditional and new items to make.
As someone who only began to make my own pickles, jams, and marmalades last year, I really appreciate books that give me guidance and new ideas to try, and recipes that take my own practice further. This book does both and is one of the best books on the topic I've added to my library.

I have spent months cooking from and inspired by this book and think it's worth the money for the apricot jam recipe alone. However, there are points that set it apart from other preserving books, which I thought other people might care to know about if they're considering buying a copy:

* Practically every single recipe uses less sugar than other writers suggest you use. You won't believe how fresh and bright these preserves taste!

* The book details simplified sterilisation techniques. It's so quick and easy to do jars and lids in a pan on the stove instead of using your oven!

* There is more than just practical advice here - Pam's writing is imbued with warmth and encouragement.

* The design is beautiful. It's a gorgeous book to use, and even more so to look at.

I wish I had bought a copy sooner. I can't wait for marmalade season to start!

Buch gefällt mir sehr. Am Anfang hat es einen sehr ausführlichen Teil über die Vorbereitungen der Gläser. Auch wie man selber Pektin herstellen kann, ist ausführlich beschrieben sowie sterilisieren. Danach kommen Marmeladen, Kompotte, Gelees, Fruchtkäse, Curds, Citrusmarmelade, eingelegtes Gemüse und Chutneys, Ketchup. Ich habe ein Quittenrezept ausprobiert, eine spanische Membrillo. Es schmeckt ausgezeichnet und ich werde über den Winter wohl noch Citrusrezepte ausprobieren.
